1 lb beef cutlets preferably 80/20
4 slices American cheese
4 brioche or hamburger buns
1 tablespoon butter
1 teaspoon salt
½ teaspoon black pepper
¼ cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon finely chopped pickles
½ teaspoon garlic powder
¼ teaspoon smoked paprika
½ small onion, very thinly sliced
Dill pickle slices
Shredded lettuce, optional
Instructions
Make the sauce: Mix mayonnaise, ketchup, mustard, chopped pickles, garlic powder, and smoked paprika. Refrigerate until ready to use.
Form the beef: Divide the ground beef into 4 loose balls. Don’t overwork the meat.
Toast the buns: Melt butter in a skillet over medium heat. Place the buns cut-side down and toast for 1–2 minutes, until golden. Set aside.
Smash the burgers: Heat a cast-iron skillet or griddle over high heat. Place the beef balls onto the hot surface. Immediately smash each one firmly with a spatula into a thin patty.
Season and cook: Season with salt and pepper. Cook for 2–3 minutes, until the edges are crispy and browned.
Flip: Scrape underneath the patties with a sturdy spatula and flip. Cook for another 1–2 minutes.
Add cheese: Place a slice of American cheese on each patty. Cook for about 30 seconds, until melted.
Build the burgers: Spread the special sauce on both toasted bun halves. Add lettuce, the cheesy beef patty, sliced onion, and pickles.
Serve: Place the top bun on each burger and serve immediately while hot and crispy.
Notes
For best results, use fresh ground beef with a good fat content.
