  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice

  • 1 tablespoon minced ginger
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon vegetable oil
  • 1/4 cup chopped peanuts (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a medium bowl, whisk together soy sauce, fish sauce, brown sugar, lime juice, garlic, ginger, and red pepper flakes. Add the chicken pieces and toss to coat. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  2. Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from marinade, allowing excess marinade to drip off, and add to the skillet in a single layer. Cook for about 5-7 minutes, turning occasionally, until the chicken is cooked through and golden brown.
  3. Remove the skillet from heat and stir in chopped cilantro. Serve the chicken bites hot, garnished with chopped peanuts and lime wedges on the side.
