2 large boneless, skinless chicken breasts (about 1 pound total)
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 tablespoon olive oil
1 cup sliced mushrooms
1/2 cup diced onions
1 cup shredded cheddar cheese
1/2 cup crumbled bacon (about 4 slices)
1/4 cup chopped green onions (for garnish)
1/2 cup barbecue sauce
Instructions
Preheat your oven to 375°F.
Season the chicken breasts with salt, pepper, and garlic powder on both sides.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5 minutes on each side until golden brown.
Remove the chicken from the skillet and set aside. In the same skillet, add the mushrooms and onions. Sauté for about 5 minutes until softened.
Return the chicken to the skillet, then top each breast with the sautéed mushrooms and onions.
Pour barbecue sauce over the chicken, then sprinkle with cheddar cheese and crumbled bacon.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F).
Remove from the oven and let it rest for a few minutes. Garnish with chopped green onions before serving.
Notes
For a lighter version, use reduced-fat cheese and turkey bacon.
You can swap the barbecue sauce for a spicy buffalo sauce for a kick.
Serve with a side of steamed vegetables or a fresh salad for a complete meal.
