  • 4 boneless, skinless chicken breasts, about 170 g each
  • 15 ml olive oil
  • 15 g butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 medium onion, thinly sliced
  • 150 g mushrooms, sliced
  • 15 g butter
  • 120 g shredded Monterey Jack or mozzarella cheese
  • 50 g shredded cheddar cheese
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry with paper towels. In a small bowl, combine the garlic powder, onion powder, paprika, salt, and black pepper. Rub the seasoning evenly over both sides of the chicken. For more even cooking, gently pound the chicken breasts to an even thickness.
  2. Sauté the Onions and Mushrooms: Heat a large skillet over medium heat. Add the butter. Add the sliced onions and cook for about 7–10 minutes, stirring occasionally, until softened and lightly golden. Add the mushrooms and cook for another 4–5 minutes, until tender and lightly browned. Transfer the vegetables to a bowl and set aside.
  3. Cook the Chicken: Add the olive oil and butter to the same skillet and heat over medium-high heat. Add the seasoned chicken breasts, making sure not to overcrowd the pan. Cook for approximately 5–7 minutes per side, depending on thickness, until golden brown and the internal temperature reaches 74°C.
  4. Smother the Chicken: Reduce the heat to low. Top each chicken breast with the sautéed onions and mushrooms. Sprinkle the Monterey Jack or mozzarella and cheddar cheeses evenly over the chicken.
  5. Melt the Cheese: Cover the skillet with a lid and cook for 2–3 minutes, or until the cheese is completely melted and gooey.
  6. Serve: Garnish with fresh chopped parsley if desired. Serve hot with mashed potatoes, seasoned rice, roasted vegetables, green beans, or a fresh salad.

Notes

  • Pound the chicken evenly so it cooks at the same rate.
  • Don’t overcrowd the skillet; cook the chicken in batches if necessary.
  • Monterey Jack gives the closest classic melty texture, while a mixture of Monterey Jack and cheddar gives a richer flavor.
  • Always check that chicken reaches 74°C in the thickest part before serving.
