1 pound ground beef
1 cup breadcrumbs
1/2 cup shredded cheddar cheese
1/4 cup chopped fresh cilantro
1/4 cup diced onion
1/4 cup diced bell pepper (any color)
1 large egg
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup salsa (for serving)
Instructions
Preheat the oven to 400°F.
In a large bowl, combine the ground beef, breadcrumbs, cheddar cheese, cilantro, onion, bell pepper, egg, chili powder, cumin, garlic powder, salt, and black pepper. Mix until well combined.
Shape the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.
Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and browned on the outside.
Serve the meatballs with salsa on the side for dipping.
Notes
For a spicier kick, add diced jalapeños to the meatball mixture or serve with a spicy salsa.
To make these meatballs healthier, substitute ground turkey for ground beef and use whole wheat breadcrumbs.
