2 salmon fillets (6 oz/170 g each)
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
¼ cup low-sodium soy sauce
3 tbsp honey
2 tbsp brown sugar
2 tbsp mirin (or rice vinegar)
1 tbsp sesame oil
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tsp cornstarch
2 tbsp water
½ cup mayonnaise
¼ cup sour cream or Greek yogurt
1 tbsp fresh lime juice
1 tsp lime zest
1 tsp fresh ginger, grated
1 clove garlic, minced
1 tsp honey
1 tbsp chopped cilantro (optional)
2 cups cooked jasmine or sushi rice
1 cup shredded carrots
1 cucumber, sliced
1 avocado, sliced
1 cup shelled edamame, cooked
1 cup shredded purple cabbage
2 green onions, sliced

Fresh cilantro (for garnish)
Lime wedges (for garnish)
Instructions
Prepare the Teriyaki Sauce: In a small saucepan, combine the soy sauce, honey, brown sugar, mirin, sesame oil, garlic, and ginger. Bring to a gentle simmer over medium heat. Mix the cornstarch with the water and stir it into the sauce. Cook for 1–2 minutes, until thickened. Set aside.
Cook the Salmon: Pat the salmon dry and season with the salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Cook the salmon for 4–5 minutes per side, depending on thickness. During the last 2 minutes, brush generously with the teriyaki sauce, turning once so it caramelizes. Remove from the heat.
Make the Ginger Lime Cream Sauce: In a small bowl, whisk together mayonnaise, sour cream (or Greek yogurt), lime juice, lime zest, grated ginger, garlic, honey, and cilantro (if using). Season with salt and pepper to taste. Refrigerate until ready to use.
Assemble the Bowls: Divide the cooked rice among four serving bowls. Arrange the carrots, cucumber, avocado, edamame, and cabbage around the rice. Place a teriyaki salmon fillet on top. Drizzle generously with the ginger lime cream sauce. Sprinkle with sesame seeds and sliced green onions.
Serve: Serve immediately with lime wedges on the side.
Notes
For a spicier kick, add some sriracha to the ginger lime cream sauce.
