A delicious Sweet and Savory Glazed Chicken Stir-Fry featuring colorful bell peppers, perfect for a quick and satisfying meal.

  • pounds boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 green onions, sliced (for garnish)
  • ⅓ cup low-sodium soy sauce
  • ¼ cup honey
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • ¼ cup chicken broth or water
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. In a bowl, toss the chicken with the cornstarch, garlic powder, onion powder, salt, and pepper. Let stand for 10 minutes.
  2. In a small bowl, whisk together the soy sauce, honey, brown sugar, rice vinegar, oyster sauce, sesame oil, cornstarch, and chicken broth. Set aside.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and cook for 5–7 minutes, turning occasionally, until golden brown and cooked through. Remove the chicken and set aside.
  4. In the same skillet, add the onion and bell peppers. Stir-fry for 3–4 minutes until crisp-tender. Add the garlic and ginger and cook for 30 seconds until fragrant.
  5. Return the chicken to the skillet. Pour in the glaze and stir continuously for 2–3 minutes, until the sauce thickens and evenly coats the chicken and vegetables.
  6. Garnish with sesame seeds and sliced green onions. Serve hot with steamed jasmine rice, brown rice, fried rice, lo mein noodles, or rice noodles.

Notes

  • Chicken thighs stay juicier than chicken breasts, but either works well.
  • Cut the bell peppers into similar-sized pieces so they cook evenly while remaining crisp.
  • Add vegetables like broccoli, snap peas, carrots, or mushrooms for extra color and nutrition.
  • For a spicy version, stir 1 teaspoon sriracha, ½ teaspoon crushed red pepper flakes, or 1 sliced Thai chili into the glaze.
