A delicious and easy recipe for Sweet Hawaiian Crockpot Chicken that brings tropical flavors to your dinner table.

Ingredients

  • 2 lb boneless, skinless chicken breasts or thighs
  • 1 can (20 oz) pineapple chunks, undrained
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 1/4 cup ketchup
  • 1 tsp garlic powder
  • 1/2 tsp ground ginger
  • 1/4 tsp black pepper
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1/4 cup sliced green onions, for garnish
  • 1 tbsp sesame seeds, optional

Instructions

  1. Place the chicken in the crockpot.
  2. Add the pineapple chunks with their juice, brown sugar, soy sauce, ketchup, garlic powder, ginger, and black pepper.
  3. Stir gently to coat the chicken.
  4. Cover and cook on LOW for 5–6 hours or HIGH for 2½–3½ hours, until the chicken reaches 165°F internally.
  5. Remove the chicken and shred or slice it.
  6. Mix the cornstarch with water to make a slurry. Stir it into the sauce in the crockpot.
  7. Cover and cook on HIGH for another 10–15 minutes, until the sauce thickens.
  8. Return the chicken to the sauce and toss to coat.
  9. Garnish with green onions and sesame seeds. Serve over steamed rice.

Notes

  • For a spicier version, add red pepper flakes.
  • Serve with steamed vegetables for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
