Ingredients
Scale
1 lb ground beef (80/20 preferred)
8 slices bacon
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
½ tsp salt
½ tsp ground black pepper
1 tbsp Worcestershire sauce
1 tbsp ketchup
1 tsp yellow mustard
2 extra-large flour tortillas, about 12–14 inches each
1½ cups shredded cheddar cheese
4 slices American cheese
1 cup frozen French fries
½ cup diced tomatoes
½ cup shredded iceberg lettuce
¼ cup diced dill pickles
2 tbsp finely diced white onion
1 tbsp butter, for toasting
½ cup mayonnaise
2 tbsp ketchup
1 tbsp yellow mustard
2 tbsp finely chopped dill pickles or relish
1 tsp pickle juice
½ tsp garlic powder
½ tsp smoked paprika
Instructions
Prepare the burger sauce. In a small bowl, whisk together the mayonnaise, ketchup, mustard, chopped pickles, pickle juice, garlic powder, and smoked paprika. Refrigerate until ready to use.
Cook the bacon. Place the bacon in a skillet over medium heat. Cook for 6–8 minutes, turning occasionally, until crispy. Transfer to a paper towel-lined plate and crumble or chop into pieces. Reserve a little bacon fat for the beef if desired.
Cook the fries. Prepare the French fries according to the package instructions until golden and crispy. Set aside.
Brown the beef. Add the ground beef to a skillet over medium-high heat. Break it apart with a spatula and cook for 7–9 minutes, until fully browned and cooked through. Drain excess grease if necessary.
Season the beef. Stir in the garlic powder, onion powder, smoked paprika, salt, pepper, Worcestershire sauce, ketchup, and mustard. Cook for another 1–2 minutes until the beef is flavorful and coated.
Warm the tortillas. Heat each tortilla briefly in a dry skillet or microwave until soft and flexible. This helps prevent tearing when wrapping the burritos.
Layer the filling. Place one tortilla on a clean surface. Add two slices of American cheese in the center, followed by half of the seasoned beef, half of the cheddar cheese, half of the bacon, and half of the fries. Add diced tomatoes, pickles, onions, and a generous drizzle of burger sauce. Keep the lettuce for the final layer to preserve its crunch.
Wrap the burrito. Fold the left and right sides of the tortilla inward. Fold the bottom edge over the filling, tuck it tightly, and roll upward to form a large, secure burrito. Repeat with the second tortilla and remaining ingredients.
Toast until golden. Melt the butter in a large skillet over medium heat. Place each burrito seam-side down and toast for 2–3 minutes per side, turning carefully, until the tortilla is golden and crispy and the cheese has melted.
Slice and serve. Let the burritos rest for 1–2 minutes, then slice each one in half. Serve warm with extra burger sauce on the side.
Notes
For a spicier kick, add jalapeños to the filling.
