Stuffed Cheddar & Jalapeño Chicken is a delicious and spicy dish featuring chicken breasts stuffed with a creamy cheese mixture and baked to perfection.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup shredded sharp cheddar cheese
  • 4 oz cream cheese, softened
  • 2 fresh jalapeños, finely diced (seeds removed for less heat)
  • 2 green onions, sliced
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 tbsp butter

Instructions

  1. Preheat oven to 400°F. Lightly grease a baking dish.
  2. Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
  3. In a bowl, combine cheddar cheese, cream cheese, jalapeños, green onions, and 1/2 tsp garlic powder.
  4. Stuff each chicken breast with the cheese mixture and secure with toothpicks if needed.
  5. Mix the smoked paprika, onion powder, remaining garlic powder, salt, and black pepper. Rub the seasoning over the outside of the chicken.
  6. Heat olive oil and butter in an oven-safe skillet over medium-high heat. Sear the chicken for 2–3 minutes per side until golden.
  7. Transfer the skillet to the oven and bake for 18–22 minutes, or until the chicken reaches 165°F internally.
  8. Let rest for 5 minutes before serving.
  9. Optional topping: Sprinkle extra cheddar over the chicken during the last 2 minutes of baking and garnish with sliced jalapeños and chopped parsley.

Notes

  • For less heat, ensure to remove the seeds from the jalapeños.
  • Letting the chicken rest before serving helps retain its juices.
