Ingredients
Scale
1 lb ground beef
½ cup breadcrumbs
1 large egg
½ small onion, finely diced
2 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tsp smoked paprika
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
½ cup shredded cheddar cheese
¾ cup BBQ sauce
2 tbsp honey
1 tbsp brown sugar
1 tbsp Worcestershire sauce
1 tsp yellow mustard
4 sub rolls
1 cup shredded cheddar cheese
½ cup shredded mozzarella cheese
2 tbsp butter, melted
1 clove garlic, minced
1 tbsp chopped fresh parsley
Instructions
Preheat oven to 400°F. In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, Worcestershire sauce, smoked paprika, garlic powder, salt, and pepper. Mix gently until combined.
Fold in the shredded cheddar. Form the mixture into about 16 meatballs.
Arrange meatballs on a parchment-lined baking sheet. Bake for 18–22 minutes, or until cooked through.
In a saucepan, combine BBQ sauce, honey, brown sugar, Worcestershire sauce, and mustard. Simmer for 2–3 minutes. Add the cooked meatballs and gently toss until completely coated.
Mix melted butter with garlic and parsley. Brush the inside of each sub roll with the garlic butter.
Place 4 BBQ meatballs in each roll. Spoon over extra sticky BBQ sauce and top generously with cheddar and mozzarella.
Place the assembled subs on a baking sheet and bake at 400°F for 5–7 minutes, until the cheese is melted and bubbly.
Garnish with fresh parsley and serve hot with extra BBQ sauce for dipping.
Notes
For extra flavor, you can add chopped jalapeños to the meatball mixture.
