A delicious and hearty Spinach-Stuffed Beef Roll filled with creamy cheese and fresh spinach, perfect for a family dinner.

700 g ground beef
1 small onion, finely chopped
3 cloves garlic, minced
1 large egg
60 g breadcrumbs
50 ml milk
40 g grated Parmesan cheese
1 tsp dried oregano
1 tsp paprika
½ tsp dried thyme
1 tsp salt
½ tsp black pepper
250 g fresh spinach
200 g cream cheese, softened
150 g shredded mozzarella
50 g grated Parmesan
2 cloves garlic, minced
¼ tsp salt
¼ tsp black pepper
¼ tsp nutmeg
100 g shredded mozzarella (optional topping)
2 tbsp grated Parmesan (optional topping)
1 tbsp fresh parsley, chopped (optional topping)
Instructions
Prepare the spinach by heating a large skillet over medium heat, adding the spinach, and cooking for 2–3 minutes until wilted.
Transfer the spinach to a colander and squeeze out as much liquid as possible, then chop finely.
In a bowl, combine the spinach, cream cheese, mozzarella, Parmesan, garlic, salt, pepper, and nutmeg to make the filling.
Preheat the oven to 190°C.
In a large bowl, combine the ground beef, onion, garlic, egg, breadcrumbs, milk, Parmesan, oregano, paprika, thyme, salt, and black pepper to prepare the beef mixture.
Place a large sheet of baking paper on your work surface and press the beef mixture into a rectangle approximately 25 × 30 cm and about 1 cm thick.
Spread the spinach and cheese mixture evenly over the beef, leaving about 2 cm around the edges.
Starting from one of the shorter sides, carefully roll the beef tightly around the filling, using the baking paper to help guide it.
Pinch the seam and ends together to keep the filling inside.
Transfer the roll seam-side down to a lightly greased baking dish or lined baking tray.
Bake uncovered for 40–50 minutes, or until the centre of the beef reaches 71°C.
During the final 8–10 minutes of baking, sprinkle mozzarella and Parmesan over the top and continue baking until the cheese is melted and golden.
Remove from the oven and let the beef roll rest for 10–15 minutes before slicing.
Slice into thick rounds and garnish with fresh parsley before serving.
Notes
Ensure not to overmix the beef mixture to keep the roll tender.
Letting the roll rest before slicing helps the filling set.
Feel free to customize the filling with other herbs or cheeses as desired.
