A tender and flavorful Southern-style beef loin roast cooked with Coca-Cola for a unique twist.

  • 2 pounds beef loin roast
  • 1 can (12 ounces) Coca-Cola
  • 1 cup beef broth
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large bowl, combine the Coca-Cola, beef broth, Worcestershire sauce, soy sauce, sliced onion, minced garlic, black pepper, salt, paprika, and garlic powder. Mix well.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the beef loin roast on all sides until browned, about 3-4 minutes per side.
  4. Once the roast is browned, pour the Coca-Cola mixture over the beef in the skillet.
  5. Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Roast for 3 to 4 hours, or until the beef is tender and easily pulls apart with a fork.
  6. Remove the skillet from the oven and let the roast rest for 10-15 minutes before slicing.
  7. Serve the sliced beef with the cooking liquid spooned over the top and garnish with chopped parsley.

Notes

  • For a spicier kick, add 1 teaspoon of cayenne pepper to the marinade.
  • Serve with classic Southern sides like collard greens or cornbread for a complete meal.
