2 pounds beef loin roast
1 can (12 ounces) Coca-Cola
1 cup beef broth
1 medium onion, sliced
4 cloves garlic, minced
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon paprika
1 teaspoon garlic powder
1 tablespoon olive oil
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 300°F (150°C).
In a large bowl, combine the Coca-Cola, beef broth, Worcestershire sauce, soy sauce, sliced onion, minced garlic, black pepper, salt, paprika, and garlic powder. Mix well.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the beef loin roast on all sides until browned, about 3-4 minutes per side.
Once the roast is browned, pour the Coca-Cola mixture over the beef in the skillet.
Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Roast for 3 to 4 hours, or until the beef is tender and easily pulls apart with a fork.
Remove the skillet from the oven and let the roast rest for 10-15 minutes before slicing.
Serve the sliced beef with the cooking liquid spooned over the top and garnish with chopped parsley.
Notes
For a spicier kick, add 1 teaspoon of cayenne pepper to the marinade.
Serve with classic Southern sides like collard greens or cornbread for a complete meal.
