Ingredients

Scale
  • 2 lbs ground beef
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 3 fresh jalapeños, finely diced
  • ½ cup breadcrumbs
  • 1 large egg
  • ½ small onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 6 slices bacon, cooked and crumbled
  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ cup ranch dressing
  • 2 tbsp sour cream
  • 1 tbsp mayonnaise
  • 1 tbsp milk
  • 1 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 375°F. Line a baking sheet or loaf pan with parchment paper.
  2. In a bowl, mix softened cream cheese, ½ cup cheddar, Monterey Jack, and half of the diced jalapeños until smooth.
  3. In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix gently until just combined.
  4. Spread about two-thirds of the beef mixture into a loaf shape. Make a shallow well down the center and spoon in the cream cheese mixture. Cover completely with the remaining beef mixture, sealing the edges.
  5. Whisk ketchup, brown sugar, Worcestershire sauce, smoked paprika, and garlic powder together. Spread half of the glaze over the meatloaf.
  6. Bake for 45 minutes. Remove from the oven and spread with the remaining glaze. Sprinkle the remaining cheddar, jalapeños, and crumbled bacon over the top.
  7. Return to the oven and bake for another 15–20 minutes, until the center reaches 160°F.
  8. Whisk ranch dressing, sour cream, mayonnaise, milk, and parsley until smooth and pourable.
  9. Let the meatloaf rest for 10–15 minutes before slicing.
  10. Drizzle generously with creamy ranch and serve hot with mashed potatoes, roasted vegetables, or a crisp green salad.

Notes

  • For a spicier version, add more jalapeños or use spicy cheese.
  • Letting the meatloaf rest helps it hold its shape when slicing.
  • Leftovers can be stored in the refrigerator for up to 3 days.
