Delicious smoked BBQ ribs that are tender and flavorful, perfect for any barbecue gathering.

Ingredients

Scale
  • 2 racks baby back ribs, about 3–4 lbs each
  • 2 tbsp yellow mustard
  • 1 cup BBQ sauce
  • Dry Rub:
  • ¼ cup brown sugar
  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp chili powder
  • 2 tsp kosher salt
  • 2 tsp black pepper
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper, optional
  • For Wrapping:
  • ½ cup apple juice
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • 2 tbsp unsalted butter

Instructions

  1. Prepare the ribs. Remove the membrane from the back of each rack. Pat the ribs dry with paper towels.
  2. Make the rub. Combine the brown sugar, paprika, garlic powder, onion powder, chili powder, salt, black pepper, smoked paprika, and cayenne.
  3. Season the ribs. Brush both sides of the ribs lightly with yellow mustard. Generously coat them with the dry rub, pressing it into the meat.
  4. Preheat the smoker to 225°F. Place the ribs on the smoker bone-side down and smoke for about 3 hours.
  5. Wrap the ribs. Place each rack on a large sheet of heavy-duty foil. Add apple juice, apple cider vinegar, honey, and butter. Wrap tightly.
  6. Return the wrapped ribs to the smoker and cook for another 2 hours, or until the meat is tender.
  7. Add the BBQ sauce. Carefully unwrap the ribs and brush both sides generously with BBQ sauce.
  8. Place the ribs back on the smoker, uncovered, for 30–60 minutes to allow the sauce to set and caramelize.
  9. Rest the ribs for 10–15 minutes before slicing between the bones.
  10. Serve with extra BBQ sauce and your favorite sides.

Notes

  • Ribs are ready when they are tender and the meat has pulled back slightly from the bones.
  • For extra sticky ribs, brush on another layer of BBQ sauce during the final 10 minutes.
