A delicious and easy recipe for Slow Cooker Pepper Steak, featuring tender beef and colorful vegetables in a savory sauce.

  • 1 ½ lbs beef sirloin or round steak, thinly sliced
  • ¼ cup all-purpose flour
  • 2 tbsp vegetable oil
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • ½ cup low-sodium soy sauce
  • 2 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp ground black pepper
  • ½ tsp salt
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 tbsp cornstarch
  • 3 tbsp cold water

Instructions

  1. Place the sliced beef in a bowl and toss with the flour until lightly coated.
  2. Heat the vegetable oil in a skillet over medium-high heat. Brown the beef in batches for 2–3 minutes per side. Transfer to the slow cooker.
  3. Add the sliced bell peppers, onion, and garlic.
  4. In a bowl, whisk together the beef broth, soy sauce, Worcestershire sauce, brown sugar, black pepper, and salt. Pour over the beef and vegetables.
  5. Add the diced tomatoes and gently stir.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the beef is tender.
  7. About 20–30 minutes before serving, mix the cornstarch with cold water to make a slurry. Stir it into the slow cooker.
  8. Cover and cook for another 20–30 minutes, until the sauce thickens.
  9. Serve hot over cooked white rice or mashed potatoes.

Notes

  • For a spicier kick, add sliced jalapeños or red pepper flakes.
  • Serve with steamed vegetables for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
