2 pounds beef chuck roast, trimmed and cut into 2-inch pieces
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 medium onion, diced
4 cloves garlic, minced
1 cup beef broth
1/2 cup unsalted butter (1 stick)
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/4 teaspoon red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Instructions
Season the beef pieces with salt and black pepper. In a large skillet, heat the olive oil over medium-high heat. Add the beef in batches and sear until browned on all sides, about 3-4 minutes per side. Transfer the browned beef to the slow cooker.
In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
Pour the beef broth into the skillet, scraping up any browned bits from the bottom. Add the Worcestershire sauce, thyme, rosemary, and red pepper flakes (if using). Bring to a simmer, then pour the mixture over the beef in the slow cooker.
Cut the butter into pieces and scatter it on top of the beef.
Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and easily shredded with a fork.
Once cooked, shred the beef in the slow cooker using two forks and stir to combine with the sauce.
Serve hot, garnished with fresh parsley.
Notes
For a richer flavor, add a splash of red wine to the beef broth before cooking.
Serve the garlic butter beef over mashed potatoes, rice, or in a sandwich for a delicious twist.
