2 pounds beef chuck roast, cut into 1-inch cubes
4 medium potatoes, diced
1 large onion, chopped
4 cloves garlic, minced
1 cup beef broth
1/2 cup unsalted butter, melted
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
In a slow cooker, combine the diced potatoes, chopped onion, and minced garlic at the bottom.
In a separate bowl, mix together the melted butter, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper.
Place the beef cubes on top of the vegetables in the slow cooker. Pour the butter mixture over the beef and vegetables, ensuring everything is well coated.
Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and the potatoes are cooked through.
Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
Notes
For a richer flavor, add a splash of red wine to the broth mixture.
Substitute sweet potatoes for regular potatoes for a healthier twist.
