Ingredients
Scale
2 ½ lbs beef chuck steaks or beef shoulder chops
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp smoked paprika
½ tsp onion powder
1 ½ cups barbecue sauce
¼ cup beef broth
¼ cup brown sugar
2 tbsp Worcestershire sauce
1 tbsp apple cider vinegar
3 cloves garlic, minced
1 medium onion, sliced
1 tbsp Dijon mustard
½ tsp smoked paprika
¼ tsp black pepper
2 tbsp fresh parsley, chopped (optional garnish)
2 green onions, sliced (optional garnish)
Instructions
Prepare the Beef: Pat the beef chops dry with paper towels. Trim excess fat if necessary.
Season the Meat: In a small bowl, combine salt, black pepper, garlic powder, smoked paprika, and onion powder. Rub the seasoning mixture evenly over both sides of the beef chops.
Sear the Beef: Heat olive oil in a large skillet over medium-high heat. Sear the beef chops for 2–3 minutes per side until nicely browned. This step adds extra flavor but is optional.
Prepare the BBQ Sauce: In a medium bowl, whisk together barbecue sauce, beef broth, brown sugar, Worcestershire sauce, apple cider vinegar, minced garlic, Dijon mustard, smoked paprika, and black pepper.
Layer the Slow Cooker: Arrange the sliced onions across the bottom of the slow cooker. Place the seasoned beef chops on top.
Add the Sauce: Pour the prepared BBQ sauce mixture evenly over the beef chops, making sure the meat is well coated.
Slow Cook: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the beef is fork-tender. Cooking time will depend on the thickness and cut of the meat.
Thicken the Sauce: Carefully remove the beef chops and set aside. If the sauce is too thin, transfer it to a saucepan and simmer until reduced to your preferred consistency.
Coat the Beef: Return the beef chops to the slow cooker and spoon the thickened BBQ sauce over them.
Garnish and Serve: Sprinkle with fresh parsley or green onions. Serve warm with extra barbecue sauce.
Notes
Choose beef chuck or shoulder chops for the most tender results after slow cooking.
Searing the beef before slow cooking adds a deeper, richer flavor.
Avoid adding too much liquid because the beef releases moisture as it cooks.
Cook until the beef is fork-tender rather than relying only on cooking time.
Use your favorite smoky or honey BBQ sauce for a different flavor.
Let the beef rest in the sauce for 5–10 minutes before serving.
