  • 1 lb (450 g) flank steak or sirloin, thinly sliced against the grain
  • 1 tablespoon (15 mL) soy sauce
  • 1 tablespoon (15 mL) cornstarch
  • 1 teaspoon (5 mL) sesame oil
  • ¼ teaspoon (1.25 mL) baking soda, optional
  • ½ teaspoon (2.5 mL) freshly ground black pepper
  • 2 tablespoons (30 mL) vegetable oil
  • 1 medium onion, sliced into thick pieces
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon (5 g) fresh ginger, grated
  • ½ cup (120 mL) beef or chicken broth
  • 3 tablespoons (45 mL) low-sodium soy sauce
  • 2 tablespoons (30 mL) oyster sauce
  • 1 tablespoon (15 mL) rice vinegar
  • 1 teaspoon (5 mL) brown sugar
  • 1 tablespoon (15 mL) cornstarch
  • 2 tablespoons (30 mL) water
  • ½ teaspoon (2.5 mL) freshly ground black pepper
  • ½ teaspoon (2.5 mL) sesame oil

Instructions

  1. Marinate the beef: Combine the sliced beef with soy sauce, cornstarch, sesame oil, baking soda if using, and black pepper. Mix well and let it rest for 20–30 minutes.
  2. Prepare the sauce: Whisk together broth, soy sauce, oyster sauce, rice vinegar, brown sugar, black pepper, and sesame oil. In a separate small bowl, mix the cornstarch and water.
  3. Sear the beef: Heat a wok or large skillet over high heat. Add 1 tablespoon of oil. Cook the beef in a single layer, working in batches if necessary, for about 1–2 minutes per side. Transfer to a plate.
  4. Cook the vegetables: Add the remaining oil. Stir-fry the onion and bell peppers for 3–4 minutes, keeping them slightly crisp. Add garlic and ginger and cook for 30 seconds.
  5. Add the sauce: Return the beef to the wok. Pour in the prepared sauce and toss everything together.
  6. Thicken: Stir the cornstarch slurry once more, then pour it into the wok. Cook for 1–2 minutes, stirring constantly, until the sauce becomes glossy and coats the beef and vegetables.
  7. Serve sizzling: Transfer immediately to a heated serving platter or sizzling plate. Garnish with sliced green onions or sesame seeds if desired.
