1 pound large shrimp, peeled and deveined
4 cups fresh spinach, washed and chopped
8 ounces cream cheese, softened
4 ounces lump crab meat, drained
1/2 cup grated Parmesan cheese
1/4 cup sour cream
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Instructions
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the shrimp to the skillet and cook for 3-4 minutes, stirring occasionally, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
In the same skillet, add the chopped spinach and cook for 2-3 minutes until wilted.
In a mixing bowl, combine the softened cream cheese, lump crab meat, Parmesan cheese, sour cream, lemon juice, salt, black pepper, and red pepper flakes. Mix until smooth and well combined.
Return the cooked shrimp to the skillet with the spinach. Pour the cream cheese mixture over the shrimp and spinach, stirring gently to combine. Cook for an additional 2-3 minutes until heated through.
Serve immediately, garnished with extra Parmesan cheese if desired.
Notes
For a lighter version, substitute Greek yogurt for sour cream.
Add diced tomatoes or bell peppers for extra color and flavor.
