1 lb medium shrimp, peeled and deveined
1½ cups long-grain white rice
2 tablespoons vegetable oil
1 small onion, finely diced
1 small green bell pepper, diced
2 celery stalks, diced
3 cloves garlic, minced
3 cups chicken broth
1 tablespoon Worcestershire sauce
1 teaspoon Cajun seasoning
½ teaspoon smoked paprika
½ teaspoon dried thyme
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chopped fresh parsley
2 green onions, sliced
1 tablespoon butter
Instructions
Season the shrimp: Toss shrimp with half of the Cajun seasoning and smoked paprika.
Sauté the vegetables: Heat oil in a large skillet or Dutch oven over medium heat. Add onion, bell pepper, and celery. Cook for 5–6 minutes, until softened.
Add garlic and rice: Stir in garlic and uncooked rice. Cook for 1–2 minutes, stirring constantly.
Add liquid and seasoning: Pour in chicken broth and Worcestershire sauce. Add the remaining Cajun seasoning, thyme, salt, and black pepper. Stir well.
Cook the rice: Bring to a boil, then reduce heat to low. Cover and simmer for 15–18 minutes, or until the rice is tender and the liquid is absorbed.
Add shrimp: Arrange the shrimp over the rice. Cover and cook for 4–6 minutes, until the shrimp are pink and cooked through.
Finish: Turn off the heat and stir in butter. Cover and let stand for 5 minutes.
Serve: Fluff the rice gently and garnish with parsley and green onions.
Notes
For extra flavor, you can add diced tomatoes or hot sauce.
