2 cups cooked corned beef, shredded
1 cup sauerkraut, drained and rinsed
1 cup Swiss cheese, shredded
1 cup rye bread, cubed
1/2 cup thousand island dressing
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 cup green onions, chopped (optional)
Instructions
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the shredded corned beef, sauerkraut, Swiss cheese, and cubed rye bread.
In a separate bowl, mix together the thousand island dressing, garlic powder, onion powder, and black pepper. Pour this mixture over the corned beef mixture and stir until everything is well combined.
Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
If desired, sprinkle chopped green onions on top for added flavor and color.
Cover the dish with aluminum foil and bake for 25 minutes.
Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
Let it cool for 5 minutes before serving.
Notes
For a spicier kick, add a few dashes of hot sauce or some sliced jalapeños to the mixture.
Substitute the Swiss cheese with provolone or cheddar for a different flavor profile.
