500 g mushrooms, finely sliced
1 sheet puff pastry, about 250–300 g, thawed
150 g Gruyère cheese, shredded
1 small onion, finely diced
3 cloves garlic, minced
2 tbsp butter
1 tbsp olive oil
1 tsp fresh thyme leaves, or ½ tsp dried thyme
½ tsp salt
¼ tsp black pepper
1 tbsp all-purpose flour
1 egg, beaten, for egg wash
1 tbsp fresh parsley, chopped
1 tsp sesame seeds or poppy seeds, optional
Instructions
Prepare the mushroom filling: Heat butter and olive oil in a large skillet over medium-high heat. Add the onion and cook for 3–4 minutes until softened.
Add the mushrooms and cook for 8–10 minutes, stirring occasionally, until the mushrooms release their moisture and become nicely browned.
Stir in the garlic, thyme, salt, and pepper. Cook for another 1–2 minutes.
Sprinkle the flour over the mushroom mixture and stir well. Cook for 1 minute. Remove from heat and let the filling cool for about 10 minutes.
Prepare the pastry: Preheat oven to 200°C. Line a baking sheet with parchment paper. Place the puff pastry sheet on the baking sheet and gently roll it into a rectangle if needed.
Add the filling: Spread the mushroom mixture down the center third of the pastry, leaving the top and bottom edges clear. Sprinkle the Gruyère evenly over the mushrooms.
Create the braid: Cut diagonal strips about 2–3 cm wide along both sides of the pastry, from the filling toward the outer edge. Fold the strips over the filling, alternating sides to create a braided appearance. Tuck in the top and bottom edges.
Brush and bake: Brush the pastry with beaten egg. Sprinkle with sesame or poppy seeds if desired.
Bake for 20–25 minutes, or until deeply golden, puffed, and crisp.
Notes
For a vegetarian option, ensure the puff pastry is made without animal products.
Feel free to add other herbs or spices to the filling for extra flavor.
