Ingredients

Scale
  • 2 ribeye or New York strip steaks, about 8 oz each
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • 2 tablespoons butter
  • 5 cloves garlic, minced
  • ¼ cup bourbon
  • 2 tablespoons beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • ½ teaspoon Dijon mustard
  • ½ teaspoon dried thyme
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Pat the steaks dry and season both sides with salt, black pepper, and smoked paprika.
  2. Heat olive oil in a heavy skillet over medium-high heat until very hot.
  3. Add the steaks and sear for about 3–4 minutes per side for medium-rare, or longer to your preferred doneness.
  4. Transfer the steaks to a plate and loosely cover with foil. Let them rest.
  5. Reduce the heat to medium. Add butter to the same skillet.
  6. Add the minced garlic and cook for about 30–60 seconds, until fragrant.
  7. Carefully add the bourbon. Simmer for 1–2 minutes to reduce. Keep the pan away from an open flame when adding alcohol.
  8. Stir in beef broth, Worcestershire sauce, brown sugar, Dijon mustard, thyme, and black pepper.
  9. Simmer for 2–3 minutes, stirring occasionally, until the sauce thickens slightly.
  10. Return the steaks to the skillet and spoon the bourbon-garlic sauce over them. Cook for another 30 seconds to 1 minute.
  11. Garnish with fresh parsley and serve immediately.

Notes

  • Serve with garlic mashed potatoes, roasted asparagus, creamed spinach, buttered green beans, or crispy roasted potatoes.
