- 2 lbs baby potatoes, halved
- 4 tablespoons butter, melted
- 3 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- Preheat oven to 425°F. Line a large baking sheet with parchment paper or lightly grease it.
- Prepare the potatoes: Wash and halve the baby potatoes. Pat them dry.
- In a large bowl, combine melted butter, olive oil, garlic, Italian seasoning, paprika, salt, and black pepper.
- Add the potatoes and toss until thoroughly coated.
- Sprinkle in ¼ cup of the Parmesan and toss again.
- Arrange the potatoes cut-side down in a single layer on the baking sheet.
- Roast for 30–35 minutes, or until golden brown and fork-tender.
- Remove from the oven and immediately sprinkle with the remaining ¼ cup Parmesan.
- Return to the oven for 3–5 minutes, until the Parmesan is melted and lightly golden.
- Garnish with fresh parsley and serve hot.
Notes
- For extra-crispy potatoes, soak the cut potatoes in cold water for 15–20 minutes, then dry them very well before seasoning.
- Use freshly grated Parmesan for the best flavor and browning.
- Add a pinch of red pepper flakes for a little heat.
