A hearty and comforting Reuben Casserole that combines corned beef, sauerkraut, Swiss cheese, and rye bread, all baked to perfection.

  • 2 cups cooked corned beef, chopped
  • 1 cup sauerkraut, drained and rinsed
  • 1 cup Swiss cheese, shredded
  • 1 cup rye bread, cubed
  • 1/2 cup thousand island dressing
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions, chopped (optional for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chopped corned beef, sauerkraut, Swiss cheese, and cubed rye bread.
  3. In a separate bowl, mix together the thousand island dressing, garlic powder, onion powder, and black pepper.
  4. Pour the dressing mixture over the corned beef mixture and stir until everything is well combined.
  5. Transfer the mixture to a greased 9×13-inch baking dish, spreading it evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and the top is golden brown.
  7. Remove from the oven and let it cool for 5 minutes before serving. Garnish with chopped green onions if desired.

Notes

  • For a lighter version, substitute turkey for corned beef.
  • Add a layer of sliced tomatoes on top before baking for extra flavor and freshness.
