2 cups cooked pulled pork, warmed
8 slices of bread (your choice, such as sourdough or white)
8 slices of cheddar cheese
4 tablespoons butter, softened
1/4 cup barbecue sauce (optional)
1/4 cup pickles, sliced (optional)
Instructions
Preheat a skillet or griddle over medium heat.
Spread 1 tablespoon of softened butter on one side of each slice of bread.
Place 4 slices of bread, buttered side down, on the skillet.
Layer 2 slices of cheddar cheese on each piece of bread.
Add 1/2 cup of warmed pulled pork on top of the cheese. If using, drizzle barbecue sauce and add pickles.
Top with another 2 slices of cheddar cheese, then place the remaining slices of bread on top, buttered side up.
Cook for about 4-5 minutes or until the bottom is golden brown. Carefully flip the sandwiches and cook for another 4-5 minutes until the other side is golden brown and the cheese is melted.
Remove from the skillet, let cool for a minute, then slice in half and serve.
Notes
For a spicy kick, add jalapeños or hot sauce to the pulled pork before assembling the sandwich.
Experiment with different cheeses like pepper jack or gouda for a unique flavor twist.
