4–6 pork chops (bone-in or boneless)
1 box (6 oz) stuffing mix (like Stove Top)
1 can (10.5 oz) cream of mushroom soup
½ cup milk
1 cup chicken broth
1 small onion, chopped
2 tbsp butter
Salt and pepper to taste
1 tsp garlic powder
1 tsp dried thyme or parsley
Optional: sliced mushrooms or green beans
Instructions
Preheat oven to 375°F (190°C) and lightly grease a baking dish.
In a saucepan, bring chicken broth and butter to a boil. Stir in stuffing mix, remove from heat, cover, and let sit for 5 minutes. Fluff with a fork.
Season pork chops with salt, pepper, and garlic powder. (Optional) Sear in a pan for 2–3 minutes per side for extra flavor.
In a bowl, mix cream of mushroom soup and milk until smooth.
Spread stuffing evenly in the baking dish. Place pork chops on top of stuffing. Pour soup mixture over the pork chops. Add onions (and optional veggies) around or on top.
Cover with foil and bake for 35–40 minutes. Remove foil and bake another 10–15 minutes until pork is fully cooked and tender.
Notes
For added flavor, consider marinating the pork chops before cooking.
