Ingredients
Scale
2½ lb round steak, cut into 6 portions
½ cup all-purpose flour
1½ tsp salt
1 tsp black pepper
1 tsp paprika
3 tbsp vegetable oil
1 large yellow onion, sliced
2 bell peppers, sliced
3 cloves garlic, minced
1 can (28 oz) crushed tomatoes
1 can (14.5 oz) diced tomatoes, with juices
1½ cups beef broth
2 tbsp Worcestershire sauce
1 tbsp brown sugar
1 tsp Italian seasoning
½ tsp smoked paprika
2 tbsp tomato paste
1 bay leaf
Salt and black pepper, to taste
2 tbsp fresh parsley, chopped
Instructions
Pat the round steak dry. In a shallow dish, combine flour, salt, pepper, and paprika. Dredge each piece of steak in the seasoned flour, coating both sides.
Use a meat mallet to pound the steak several times on both sides to tenderize it.
Heat the oil in a large Dutch oven or heavy oven-safe skillet over medium-high heat. Brown the steaks for about 2–3 minutes per side. Transfer to a plate.
Add the onion and bell peppers to the same pot. Cook for 4–5 minutes until they begin to soften. Add the garlic and cook for another 30 seconds.
Stir in the crushed tomatoes, diced tomatoes, beef broth, Worcestershire sauce, brown sugar, Italian seasoning, smoked paprika, tomato paste, and bay leaf. Season with additional salt and pepper as needed.
Nestle the browned steaks into the tomato sauce, making sure they’re mostly covered.
Cover the pot and simmer over low heat for about 1½–2 hours, stirring occasionally, until the steak is very tender.
Remove the bay leaf, taste the sauce, and adjust the seasoning. Sprinkle with fresh parsley before serving.
Spoon the tender steak and plenty of tomato gravy over mashed potatoes, rice, egg noodles, or buttered noodles.
Notes
For best results, allow the steak to marinate in the seasoned flour for at least 30 minutes before cooking.
This dish can be made ahead of time and reheated for serving.
Feel free to add other vegetables like carrots or celery for extra flavor.
