Ingredients
Scale
1½ lb beef sirloin steak, thinly sliced
2 tbsp vegetable oil
1 medium yellow onion, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
3 cloves garlic, minced
1 tsp salt
½ tsp black pepper
1 tsp paprika
2 cups beef broth
¼ cup soy sauce
2 tbsp Worcestershire sauce
1 tbsp tomato paste
1 tbsp brown sugar
1 tsp Italian seasoning
½ tsp garlic powder
¼ tsp black pepper
2 tbsp cornstarch
3 tbsp cold water
4–6 cups cooked white rice or mashed potatoes
Fresh parsley, chopped
Instructions
Pat the steak dry and slice it thinly against the grain. Season with salt, pepper, and paprika.
Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the beef in batches and sear for about 1–2 minutes per side, just until browned. Transfer to a plate.
Add the remaining oil to the skillet. Add the onion and bell peppers and cook for 5–7 minutes, until softened but still slightly crisp. Add the garlic and cook for 30 seconds.
Pour in the beef broth, soy sauce, Worcestershire sauce, and tomato paste. Stir in the brown sugar, Italian seasoning, garlic powder, and black pepper. Bring to a gentle simmer.
Mix cornstarch and cold water in a small bowl until smooth. Slowly stir the slurry into the simmering sauce and cook for 2–3 minutes, until the gravy thickens.
Add the seared beef and any accumulated juices back to the skillet. Stir everything together and simmer for 5–7 minutes, allowing the flavors to blend.
Taste and adjust the seasoning as needed. Sprinkle with fresh parsley.
Spoon the pepper steak and gravy over hot white rice or creamy mashed potatoes.
Notes
Slice the beef against the grain for the most tender results.
Don’t overcrowd the skillet when searing; work in batches for better browning.
For extra richness, stir in 1 tablespoon of butter at the end.
Add sliced mushrooms for an extra hearty dinner.
Leftovers reheat well with a splash of beef broth.
