1½ lbs boneless, skinless chicken breasts, cut into bite-size pieces
½ cup all-purpose flour
½ teaspoon garlic powder
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
1 large egg
2 tablespoons milk
2 tablespoons vegetable oil
½ cup red pepper jelly
2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon apple cider vinegar
1 teaspoon minced garlic
½ teaspoon red pepper flakes, optional
1 tablespoon butter
Instructions
Pat the chicken pieces dry. In a bowl, combine the flour, garlic powder, paprika, salt, and black pepper.
In another bowl, whisk together the egg and milk. Dip each chicken piece into the egg mixture, then coat thoroughly with the seasoned flour.
Heat the vegetable oil in a large skillet over medium-high heat. Cook the chicken in batches for 3–4 minutes per side, until golden brown and the internal temperature reaches 165°F.
In a small saucepan over medium-low heat, combine the pepper jelly, honey, soy sauce, apple cider vinegar, garlic, and red pepper flakes. Stir until smooth and bubbling gently.
Add the butter and stir until melted and glossy.
Add the cooked chicken bites to the skillet with the glaze. Toss gently for 1–2 minutes, coating every piece in the sticky sauce.
Transfer to a serving plate and garnish with sliced green onions, sesame seeds, or chopped parsley if desired.
Notes
For extra-crispy chicken, place the cooked bites on a wire rack for a few minutes before tossing them in the glaze.
