1 lb ground beef
1/2 small onion, finely diced
2 cloves garlic, minced
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp cumin
1/2 tsp salt
1/4 tsp black pepper
1/2 cup salsa
1 cup shredded pepper jack cheese
1 box (8.5 oz) cornbread mix
1 large egg
1/3 cup milk
2 tbsp melted butter
Instructions
Preheat oven to 375°F. Brown the ground beef and onion in a skillet over medium heat until the beef is cooked through. Drain excess grease.
Add garlic, chili powder, smoked paprika, cumin, salt, and pepper. Cook for 1 minute.
Stir in the salsa and simmer for 2–3 minutes. Remove from heat and stir in 1/2 cup pepper jack cheese.
In a bowl, combine cornbread mix, egg, milk, and melted butter. Mix just until combined.
Grease a 12-cup muffin pan. Divide the cornbread batter among the cups, using about 1 tablespoon per cup. Press the batter slightly up the sides to create a cup.
Spoon the beef mixture into each cornbread cup.
Top with the remaining 1/2 cup pepper jack cheese.
Bake for 15–18 minutes, until the cornbread is golden and the cheese is melted.
Let cool for 5 minutes before removing from the pan.
Notes
Feel free to adjust the spice level by adding more chili powder or using a spicier salsa.
These cups can be made ahead of time and reheated in the oven.
Serve with sour cream or guacamole for added flavor.
