Ingredients
Scale
2 cups all-purpose flour
1 ½ cups granulated sugar
1 tablespoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
½ cup unsalted butter, softened
1 cup milk
2 large eggs
1 teaspoon vanilla extract
3 cups fresh peaches, peeled and sliced
1 tablespoon lemon juice
Powdered sugar for dusting (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, and cinnamon. Mix well.
Add the softened butter, milk, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for about 2 minutes until the batter is smooth and well combined.
Gently fold in the sliced peaches and lemon juice until evenly distributed in the batter.
Pour the batter into the prepared baking dish and spread it evenly.
Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
Dust with powdered sugar before serving, if desired.
Notes
For added flavor, consider mixing in a teaspoon of almond extract or a handful of chopped nuts, such as pecans or walnuts.
Substitute fresh peaches with other fruits like blueberries or cherries for a different twist on this cake.
