1 cup old-fashioned rolled oats
1 cup packed brown sugar
1½ teaspoons baking powder
1 teaspoon salt
1 cup cold unsalted butter, cubed
1 large egg
½ cup sour cream
1 teaspoon vanilla extract
½ teaspoon almond extract
8 cups fresh peaches, peeled, pitted, and diced
1 cup packed brown sugar
3 tablespoons cornstarch
¾ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
1 tablespoon fresh lemon juice
1 cup powdered sugar
2 tablespoons milk
Instructions
Preheat the oven: Set oven to 350°F. Line a 9 × 13-inch baking pan with parchment paper and lightly grease it.
Make the peach filling: Combine peaches, brown sugar, cornstarch, cinnamon, nutmeg, ginger, and lemon juice. Toss until evenly coated.
Make the crust mixture: In a large bowl, combine flour, oats, brown sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
Add the wet ingredients: In a separate bowl, whisk together the egg, sour cream, vanilla, and almond extract. Stir into the flour mixture until a crumbly dough forms.
Build the bars: Press about half of the dough firmly into the bottom of the prepared pan. Spread the peach filling evenly over the crust.
Add the topping: Crumble the remaining dough evenly over the peaches.
Bake: Bake for 40–45 minutes, until the top is golden brown and the peach filling is bubbling.
Cool: Let the bars cool completely before cutting so the filling can set.
Make the glaze: Whisk powdered sugar and milk until smooth. Drizzle over the cooled bars.
Serve: Cut into squares and serve as-is or with a scoop of vanilla ice cream.

Ensure peaches are ripe for the best flavor.
Can substitute with frozen peaches if fresh are not available.
