A delicious Patty Melt featuring juicy beef patties, caramelized onions, and a special sauce, all grilled between slices of rye or sourdough bread.

Ingredients

Scale
  • 1 lb ground beef (80/20 recommended)
  • 1 tsp Worcestershire sauce
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 1 tbsp vegetable oil, if needed for cooking
  • 2 medium yellow onions, thinly sliced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • ¼ tsp salt
  • 1 tsp brown sugar, optional
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp sweet pickle relish
  • 1 tsp Worcestershire sauce
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 1 tsp pickle juice, optional
  • 8 slices rye bread or sourdough bread
  • 8 slices Swiss cheese
  • 4 slices cheddar cheese, optional
  • 4 tbsp softened butter, for spreading on the bread

Instructions

  1. Make the special sauce. In a small bowl, whisk together the mayonnaise, ketchup, mustard, pickle relish, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and optional pickle juice. Cover and refrigerate while preparing the other ingredients.
  2. Caramelize the onions. Heat the butter and olive oil in a skillet over medium-low heat. Add the sliced onions and salt. Cook for 15–20 minutes, stirring occasionally, until soft and deeply golden. Add the optional brown sugar during the final few minutes. Transfer to a plate.
  3. Prepare the beef patties. Combine the ground beef, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper in a bowl. Divide into four thin patties shaped to fit the bread.
  4. Cook the patties. Heat a skillet over medium-high heat. Cook the patties for approximately 3–5 minutes per side, depending on thickness, until browned and cooked through to an internal temperature of 160°F. Transfer to a plate.
  5. Prepare the bread. Spread softened butter on one side of each bread slice. Place four slices butter-side down on a clean work surface. Spread some of the prepared sauce on the unbuttered sides.
  6. Assemble the patty melts. Layer each sandwich with one slice of Swiss cheese, a beef patty, caramelized onions, optional cheddar cheese, and another slice of Swiss cheese. Spread additional sauce on the unbuttered side of the remaining bread slices and place them on top, butter-side facing outward.
  7. Grill the sandwiches. Heat a clean skillet or griddle over medium-low heat. Cook each sandwich for 3–5 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted. Reduce the heat if the bread browns too quickly.
  8. Rest and serve. Transfer the sandwiches to a cutting board and let them rest for 1–2 minutes. Slice in half and serve hot with extra sauce on the side.

Notes

  • For a spicier sauce, add a dash of hot sauce.
  • Feel free to customize the cheese according to your preference.
  • Ensure the beef patties are not too thick for even cooking.
