Ingredients
Scale
4 boneless, skinless chicken breasts
2 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
½ tsp onion powder
½ tsp salt
½ tsp black pepper
½ cup mayonnaise
¼ cup honey
2 tbsp Dijon mustard
1 tbsp yellow mustard
1 tsp lemon juice
8 slices bacon, cooked and crumbled
8 oz mushrooms, sliced
1 tbsp butter
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
2 tbsp chopped fresh parsley
Instructions
Make the honey mustard: Whisk mayonnaise, honey, Dijon mustard, yellow mustard, and lemon juice until smooth. Refrigerate until needed.
Season the chicken: Pound the chicken breasts to an even thickness. Rub both sides with olive oil, paprika, garlic powder, onion powder, salt, and black pepper.
Cook the mushrooms: Melt butter in a skillet over medium heat. Add mushrooms and cook for 5–7 minutes, until golden and tender. Set aside.
Sear the chicken: Heat the same skillet over medium-high heat. Cook the chicken for 4–5 minutes per side, until golden brown and nearly cooked through.
Assemble: Place the chicken in a lightly greased baking dish. Spread a generous layer of honey mustard over each piece. Top with sautéed mushrooms and crumbled bacon.
Add cheese: Sprinkle Monterey Jack and cheddar evenly over the chicken.
Bake: Bake at 375°F for 10–15 minutes, until the cheese is melted and the chicken reaches 165°F internally.
Garnish: Sprinkle with fresh parsley.
Serve: Serve hot with extra honey mustard on the side, along with fries, mashed potatoes, or steamed vegetables.
Notes
For extra flavor, marinate the chicken in the seasoning for a few hours before cooking.
