2 large boneless, skinless chicken breasts (about 1 pound total)
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon Italian seasoning
2 tablespoons olive oil
4 cups broccoli florets
1 cup cherry tomatoes, halved
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley (optional)
1 lemon, cut into wedges
Instructions
Preheat your oven to 400°F (200°C).
Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, garlic powder, and Italian seasoning.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and sear for about 4-5 minutes on each side until golden brown.
Remove the chicken from the skillet and set aside. In the same skillet, add the broccoli and cherry tomatoes, tossing them in the remaining oil and drippings.
Place the chicken back into the skillet on top of the vegetables. Sprinkle the grated Parmesan cheese evenly over the chicken and vegetables.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the broccoli is tender.
Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley and serve with lemon wedges on the side.
Notes
For a spicier kick, add red pepper flakes to the chicken seasoning.
You can substitute the broccoli with asparagus or green beans for a different flavor profile.
