8 slices sourdough or thick white bread
2 cups sliced mushrooms
1 medium yellow onion, thinly sliced
2 tbsp butter
1 tbsp olive oil
1 tsp minced garlic
1/2 tsp salt
1/4 tsp black pepper
8 oz Gouda cheese, shredded or thinly sliced
1 tsp fresh thyme leaves, optional
Instructions
Heat olive oil and 1 tbsp butter in a skillet over medium heat. Add the onions and cook for 8–10 minutes, stirring occasionally, until softened and golden.
Add the mushrooms and cook for 5–7 minutes, until browned and their moisture has cooked away.
Stir in garlic, salt, pepper, and thyme. Cook for another 30 seconds, then remove from heat.
Butter one side of each bread slice with the remaining butter.
Place 4 slices buttered-side down in a skillet. Layer with Gouda, the mushroom-onion mixture, then another layer of Gouda.
Top with the remaining bread slices, buttered-side up.
Cook over medium-low heat for 3–4 minutes per side, pressing gently with a spatula, until golden brown and the Gouda is completely melted.
Slice and serve hot.
Notes
For added flavor, consider using a mix of different mushrooms.
Feel free to add other herbs or spices to enhance the taste.
