Mississippi Mud Chicken is a flavorful and hearty dish featuring tender chicken breasts smothered in a delicious sauce and topped with cheese and crispy onions.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • ½ cup ranch dressing
  • ½ cup barbecue sauce (your favorite variety)
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon onion powder
  • 1½ cups shredded sharp cheddar cheese
  • 1 cup crispy fried onions
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish with olive oil.
  2. Pat the chicken dry and season both sides with salt, black pepper, garlic powder, and smoked paprika. Arrange the chicken in a single layer in the baking dish.
  3. In a medium bowl, whisk together ranch dressing, barbecue sauce, Worcestershire sauce, and onion powder. Pour the sauce evenly over the chicken.
  4. Bake uncovered for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F.
  5. Remove the baking dish from the oven and sprinkle shredded cheddar cheese and crispy fried onions over the chicken. Return to the oven and bake for an additional 5–7 minutes until the cheese is melted and the onions are golden.
  6. Let the chicken rest for 5 minutes and sprinkle with chopped parsley before serving.

Notes

  • Feel free to adjust the amount of barbecue sauce based on your taste preference.
  • For a spicier kick, consider adding some hot sauce to the ranch dressing.
  • This dish pairs well with a side of rice or a fresh salad.
