1 pound ground beef
1 cup crushed tortilla chips
1/2 cup shredded cheddar cheese
1/2 cup salsa
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1 large egg
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh cilantro (optional)
Instructions
Preheat the oven to 350°F.
In a large mixing bowl, combine the ground beef, crushed tortilla chips, cheddar cheese, salsa, onion, bell pepper, egg, garlic powder, cumin, chili powder, salt, black pepper, and cilantro (if using). Mix until well combined.
Transfer the meat mixture into a loaf pan and shape it into a loaf.
Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F.
Let the meatloaf rest for 10 minutes before slicing.
Serve with additional salsa or guacamole on the side if desired.
Notes
For a spicier kick, add diced jalapeños to the meat mixture.
You can also substitute ground turkey or chicken for a leaner option.
