1 pound cod fillets
2 tablespoons olive oil
1 small onion, diced
3 cloves garlic, minced
1 can (14.5 ounces) diced tomatoes, undrained
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
1/4 cup fresh basil, chopped
1 lemon, juiced
Cooked rice or quinoa, for serving
Instructions
Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 5 minutes, until softened.
Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
Add the diced tomatoes (with their juice), oregano, dried basil, red pepper flakes (if using), salt, and pepper. Bring the mixture to a simmer and let it cook for about 10 minutes, stirring occasionally.
Gently place the cod fillets into the skillet, spooning some of the sauce over the top. Cover the skillet and let it cook for 8-10 minutes, or until the cod is cooked through and flakes easily with a fork.
Remove the skillet from heat and stir in the fresh basil and lemon juice.
Serve the cod over cooked rice or quinoa, spooning the tomato basil sauce on top.
Notes
For a creamier sauce, stir in 1/4 cup of heavy cream or coconut milk just before adding the cod.
Add sliced olives or capers for an extra Mediterranean flair.
