Heat olive oil in a large skillet over medium-high heat.
Add the chicken pieces to the skillet and season with garlic powder, onion powder, oregano, paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
Add the sliced bell peppers, zucchini, and cherry tomatoes to the skillet. Stir well and cook for an additional 4-5 minutes, until the vegetables are tender but still crisp.
Stir in the sliced olives and lemon juice, cooking for another minute to heat through.
Remove from heat and sprinkle with crumbled feta cheese and fresh parsley before serving.

For a spicier kick, add red pepper flakes while cooking the chicken.
You can substitute the chicken with shrimp or tofu for a different protein option.
