  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces to the skillet and season with garlic powder, onion powder, oregano, paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  3. Add the sliced bell peppers, zucchini, and cherry tomatoes to the skillet. Stir well and cook for an additional 4-5 minutes, until the vegetables are tender but still crisp.
  4. Stir in the sliced olives and lemon juice, cooking for another minute to heat through.
  5. Remove from heat and sprinkle with crumbled feta cheese and fresh parsley before serving.

  • For a spicier kick, add red pepper flakes while cooking the chicken.
