Mashed Potato Cheese Puffs are irresistibly crispy delights filled with gooey cheese and seasoned mashed potatoes, perfect for any occasion.

  • 2 pounds Yukon Gold or Russet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • ¼ cup heavy cream (or whole milk)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 6 ounces mozzarella cheese, cut into 12 cubes (about ½-inch each)
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 large egg, lightly beaten
  • 2 tablespoons melted butter
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped parsley

Instructions

  1. Bring a large pot of salted water to a boil. Add the potatoes and cook for 15–18 minutes, or until fork-tender. Drain well and return them to the hot pot for 1 minute to remove excess moisture.
  2. Mash the potatoes until smooth. Mix in butter, heavy cream, salt, black pepper, garlic powder, and onion powder. Allow the potatoes to cool for about 10 minutes.
  3. Stir into the cooled mashed potatoes cheddar cheese, Parmesan cheese, parsley, and beaten egg. Mix until well combined.
  4. Preheat the oven to 400°F. Grease or line a 12-cup muffin pan. Scoop about ¼ cup of the potato mixture into each muffin cup. Press a cube of mozzarella into the center. Cover with a little more mashed potato mixture and seal completely. Smooth the tops.
  5. Brush each puff with melted butter. Mix the Parmesan and garlic powder together, then sprinkle over the tops.
  6. Bake for 25–30 minutes, or until golden brown, crispy around the edges, and heated through. For extra browning, broil for 1–2 minutes at the end, watching carefully.
