2 pork tenderloins (about 1 pound each)
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon red pepper flakes (optional)
1/2 cup chicken broth
1/4 cup honey
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, rosemary, and red pepper flakes.
Pat the pork tenderloins dry with paper towels and rub the spice mixture all over the meat.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork tenderloins and sear for about 3-4 minutes on each side until browned.
In a separate bowl, whisk together the chicken broth, honey, Dijon mustard, and apple cider vinegar. Pour this mixture over the seared pork in the skillet.
Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
Remove the skillet from the oven and let the pork rest for 5-10 minutes before slicing.
Drizzle the pan sauce over the sliced pork and garnish with fresh parsley before serving.
Notes
For a sweeter glaze, add an extra tablespoon of honey or a splash of maple syrup.
Serve with roasted vegetables or mashed potatoes for a complete meal.
