A delicious and easy recipe for Maple Mustard Salmon served with golden roasted potatoes.

  • 4 salmon fillets
  • 1 1/3 lb baby potatoes, halved
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp Dijon mustard
  • 2 tbsp whole grain mustard
  • 2 tbsp maple syrup
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 400°F and line a baking tray with parchment paper. Toss the halved baby potatoes with olive oil, salt, and black pepper, then spread them on one side of the tray.
  2. In a small bowl, combine Dijon mustard, whole grain mustard, maple syrup, soy sauce, lemon juice, and minced garlic. Whisk until the glaze looks smooth and glossy.
  3. Place the salmon fillets on the open side of the tray. Brush the fillets generously with the maple mustard glaze so the tops are fully coated.
  4. Roast until the salmon is cooked through and the potatoes are golden and crisp, about 12 to 15 minutes for the salmon, allowing extra time for the potatoes as needed. Brush the salmon again partway through if you want a thicker glaze.
  5. Spoon any remaining glaze over the warm salmon. Scatter chopped parsley over the tray and serve immediately while the potatoes are crisp.
