4 boneless, skinless chicken breasts
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
4 slices of bacon, cooked until crispy and crumbled
1 cup shredded cheddar cheese
1/2 cup BBQ sauce (preferably smoky sweet)
1 tablespoon olive oil
2 green onions, sliced (for garnish)
Instructions
Preheat your oven to 375°F.
In a small bowl, mix together the garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub this seasoning mixture evenly over both sides of the chicken breasts.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 4-5 minutes on each side, until golden brown.
Once the chicken is seared, pour the BBQ sauce over the top of each breast, then sprinkle the crumbled bacon and shredded cheddar cheese evenly over the chicken.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Remove from the oven and let it rest for a few minutes. Garnish with sliced green onions before serving.
Notes
For a spicier kick, add sliced jalapeños on top of the cheese before baking.
For a lighter version, substitute the bacon with turkey bacon and use reduced-fat cheese.
