  • 4 large russet potatoes
  • 1 pound sirloin steak, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup cooked bacon bits
  • 1/4 cup chopped green onions
  • 1/4 cup butter

Instructions

  1. Preheat the oven to 400°F.
  2. Wash and scrub the potatoes, then prick them several times with a fork.
  3. Bake the potatoes directly on the oven rack for about 45-60 minutes, or until tender when pierced with a fork.
  4. While the potatoes are baking, heat the olive oil in a skillet over medium-high heat.
  5. Season the steak bites with garlic powder, onion powder, salt, and pepper.
  6. Add the steak to the skillet and cook for about 5-7 minutes, stirring occasionally, until browned and cooked to your desired doneness. Remove from heat.
  7. Once the potatoes are done, carefully remove them from the oven and let them cool for a few minutes.
  8. Cut a slit down the center of each potato and gently squeeze the ends to open them up.
  9. Add a tablespoon of butter to each potato, followed by a generous scoop of sour cream, shredded cheddar cheese, steak bites, bacon bits, and green onions.
  10. Serve immediately while hot.

Notes

  • For a spicier version, add some diced jalapeños or a drizzle of hot sauce on top.
  • You can substitute the steak with grilled chicken or sautéed mushrooms for a different flavor profile.
