4 large russet potatoes
1 pound sirloin steak, cut into bite-sized pieces
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 cup shredded cheddar cheese
1 cup sour cream
1/2 cup cooked bacon bits
1/4 cup chopped green onions
1/4 cup butter
Instructions
Preheat the oven to 400°F.
Wash and scrub the potatoes, then prick them several times with a fork.
Bake the potatoes directly on the oven rack for about 45-60 minutes, or until tender when pierced with a fork.
While the potatoes are baking, heat the olive oil in a skillet over medium-high heat.
Season the steak bites with garlic powder, onion powder, salt, and pepper.
Add the steak to the skillet and cook for about 5-7 minutes, stirring occasionally, until browned and cooked to your desired doneness. Remove from heat.
Once the potatoes are done, carefully remove them from the oven and let them cool for a few minutes.
Cut a slit down the center of each potato and gently squeeze the ends to open them up.
Add a tablespoon of butter to each potato, followed by a generous scoop of sour cream, shredded cheddar cheese, steak bites, bacon bits, and green onions.
Serve immediately while hot.
Notes
For a spicier version, add some diced jalapeños or a drizzle of hot sauce on top.
You can substitute the steak with grilled chicken or sautéed mushrooms for a different flavor profile.
