A delightful and moist lemon blueberry coffee cake topped with a buttery glaze, perfect for any occasion.

  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • ½ cup sour cream
  • 1 cup fresh blueberries
  • ½ cup unsalted butter, melted (for topping)
  • ½ cup granulated sugar (for topping)
  • 1 tsp lemon zest (for topping)
  • 1 tbsp fresh lemon juice (for topping)
  • ½ tsp vanilla extract (for topping)
  • 1 cup powdered sugar (for glaze)
  • 1–2 tbsp fresh lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F. Line a 9×9-inch baking pan with parchment paper and lightly grease it.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat softened butter and sugar until light and creamy.
  4. Beat in the eggs one at a time, then add vanilla, lemon zest, and lemon juice.
  5. Mix in the dry ingredients alternately with the sour cream, beginning and ending with the dry ingredients. Don’t overmix.
  6. Gently fold in the blueberries.
  7. Spread the batter evenly into the prepared pan.
  8. Stir together the melted butter, sugar, lemon zest, lemon juice, and vanilla. Drizzle evenly over the batter.
  9. Bake for 35–40 minutes, or until the edges are golden and a toothpick inserted near the center comes out with a few moist crumbs.
  10. Cool completely in the pan.
  11. Mix powdered sugar with enough lemon juice to make a smooth glaze. Drizzle over the cooled cake.
  12. Cut into 16 buttery lemon-blueberry squares and serve.
