2 cans (5 oz each) tuna in water, drained well
2 large eggs
½ cup shredded cheddar cheese
¼ cup mayonnaise
2 tablespoons finely diced onion
1 tablespoon chopped fresh parsley
1 teaspoon Dijon mustard
½ teaspoon garlic powder
¼ teaspoon paprika
¼ teaspoon black pepper
¼ teaspoon salt
1 tablespoon olive oil or butter, for cooking
Instructions
In a large bowl, combine the drained tuna, eggs, cheddar cheese, mayonnaise, onion, parsley, Dijon mustard, garlic powder, paprika, black pepper, and salt.
Mix thoroughly until the mixture holds together. Let it rest for 5 minutes.
Divide the mixture into 6 portions and shape each into a firm patty.
Heat the olive oil or butter in a skillet over medium heat.
Cook the patties for 3–4 minutes per side, carefully flipping once, until golden brown and crisp.
Sprinkle a little extra cheddar cheese over the patties during the final minute and cover the skillet briefly so the cheese melts.
Serve hot with lettuce, sliced avocado, pickles, or a low-carb dipping sauce.

For added flavor, consider using different herbs or spices.
